What you need:

  • Chemex, pour-over coffee maker
  • Filtered water
  • Water kettle/measure cup
  • Paper filters
  • Coffee grinder
  • Scale (if you want to get technical)

I typically use two tablespoons of coffee; however, if you have a scale then 1g of coffee to 16 ml of water.

Grinding the coffee to about the consistency of table salt or rough sea salt makes for a balanced cup of coffee

Instructions:

  1. Measure out your coffee beans and water
  2. Grind the beans to the consistency preferred and set aside. Bring water to a boil.
  3. Place a paper filter in the coffee maker. Some will have 3 folds on one side, place this side toward the spout.
  4. Wet the paper filter and pour excess out, this prevents any “paper taste” in your cup of coffee.
  5. Add the coffee grounds
  6. Add water, just covering the grounds so the coffee can “bloom”. Wait 45 seconds, releases gasses which enhances overall flavor profile.
  7. After the bloom, start pouring the remaining hot water over the coffee in circles.
  8. Remove the filter and enjoy coffee!

Flavor profile:

Low acidity (lively and dull, not intense), a full body that weighs on your tongue, low bitterness, nutty and complex aroma. Aftertaste is light and chocolate.
